... although, aaactually this Cormé 2020 wasn't even made from apples. Or at least sort of apples no one would really enjoy eating! Sorry for this fruity limbo. It's difficult, and I am tired ... This quite remarkable and rare fizzy beverage was produced from the fruit of the sorb tree resp. the service tree (strange name indeed)! I have to admit I have never really heard of this fruit nor the tree … but I've most certainly heard of the producer: Eric Bordelet! I don't think there is the necessity to “entertain“ the reader with an introduction! Just in short: King of Cidre or Poiré. Let's just get started ...
The Cormé 2020 by Éric Bordelet showed a glittering
dark yellow'ish hue with some sparkling reflexes
of orange-red paired with medium lively-spawning mousse. In the nose
plenty of red apples including stems and stuff and more, a slight
idea of must, elderberry, woodruff and superb verbena. Surprisingly
fragrant in an enchanting elegant way. On the palate quite mild and sublimely
harmonious mousse, plenty of spice from verbena, woodruff and
mild pepper paired with Turkish apple tea and earthy iron. The rather unique
leathery tannin was a really convincing experience which I've never had so
well integrated in a wine made from fruit until this very day. Same for the
exceptionally broad, full-bodied and "cunning" mouth feel. It's
analytical sweetness - 30g residual sugar per litre - seemed to be no issue at all. Same impression on the day
after ... concerning possible "neurological" indispositions of some sort! Really very decent***** start into a
hopefully better year!
